A long running joke in my family is that when you aren’t sure what to do with something in the kitchen, put butter on it. It’s a kind of one-size-fits-all saying, like referring to the multiple uses for duct tape by exclaiming, ‘Just duct it!’

Something that most family members, especially kids seem to delight in. Using orange sauce or cranberry sauce or even raspberry or strawberry sauce simply ladled over a steamed piece of fish is not only extremely easy, but it can make even ‘boring’ cod look like it’s dressed up and ready to go to the casino.

Season it!

Well seasoned cast iron is the best “non-stick” cookware you could hope for! And it’s really very simple. If you have new cast iron that is not preseasoned (much of it now comes seasonsed) or you have old cast iron that needs “renewal”, here are the steps to create a long-lasting, non-stick cooking surface:

  1. Begin with ” clean” cookware. In this case, clean means free of any coasting that may have been applied by the manufacturer. If you can find some old cast iron, ensure it is free of rust. A palm sander with a medium grit disk is an ideal tool for cleaning the surface.
  2. Use lard to season the surface. Use enough to generously cover the surface, place the pan in the oven at 275°F to 300°F and bake for two to three hours. Pour off the excess lard. Let the pan cool, then wipe with a paper towel. Repeat this process one or two times for best results. It’s best initially to use the pan for some oil or fat dishes after seasoning.
  3. After each use, let the pan cool then simply wipe it with a paper towel, or, if some food is stuck to the pan, soak it just long enough to loosen the food, then wipe the pan. Avoid the use of detergents or scouring pads as these will remove the seasoned surface.

If you don’t anticipate using your cast iron for a long period of time, wipe it with a thin coat of a stable oil such as olive oil to help keep moisture, and therefore rust, at bay.

One word of caution: the handles on your cast iron cookware will get extremely hot. Keep some good potholders handy and be sure to use them!

Maybe it’s just me, but getting ready for the Thanksgiving meal had me at my wits end when we sat down to dinner. It took us all-day, beginning with prepping the turkey at the crack of dawn and winding down with a frenzy of last minute activity.

Checking every course for proper zing, I felt like I had been preparing and tasting the whole time. Another main point about enamel cast-iron cookware that you must always keep in mind is that it is about the most expensive cookware on the face of the planet.  The process of making the enamel cookware is a lot more complicated than making many other kinds of cookware.  

If you are interested in getting enamel cast-iron cookware, you might be better off getting one piece at a time rather than a whole set.  You would have to contend with the potential for the cookware not to match.  You can get bargains on auction websites like eBay, until you look at how much you have to pay for shipping.  Although not as heavy as brae cast-iron, it’s still plenty heavy.

With proper care, enamel cast-iron cookware can last for decades.  You need to let the pots and pans cool off completely before washing them, otherwise the clashing temperatures may wind up warping the cookware.  It’s best to use soft sponges or washcloths rather than anything harsh.
